San Juan is one of the great embarkation cities, and worth a night either side of the voyage. Old San Juan is a walkable grid of blue-cobbled streets, pastel facades and two enormous 16th-century Spanish forts over the Atlantic. Stay late for the food, the rum, and a bioluminescent bay that lights up with every paddle stroke.
